Popovers- a Warm Treat on a Cold Night

I’m so not a fan of winter. I hate being cold. That’s why I love warm treats in winter. When it got really cold while I was growing up, my dad would make us popovers. I loved eating them with grape jelly.

Back then, Dad made them in a regular muffin tin. Later, he used glass custard cups. But more in recent times, he used a popover tin.

When I got married, I was so excited to get my own set of popover tins. I love to make popovers. Over the years, I’ve tweaked the recipe that my dad used. My recipe is below.

Making Popovers

Preheat the oven to 400 degrees. Grease your popover pan (whether it be a muffin tin or a popover tin).

In a bowl, break open two eggs and slightly beat them. Not too much though. Add your flour, milk and salt to the eggs. Beat until smooth. But be careful, you don’t want to overbeat or the popovers will fall.

If you’re using muffin tins, fill the cup 3/4 full. If you’re using custard cups or popover tins, fill them 1/2 full.

Place the oven rack in the middle of the oven. Bake for 20 minutes. Turn the tins around in the oven. Bake for 8 to 10 minutes or until deep golden brown. This recipe makes six. This recipe can be easily doubled.

    1. These are really hard to describe. They are bread-y like a roll, shaped like a muffin and light and fluffy like a croissant. But they are so simple (as long as you don’t overbeat them, which I’ve done!). I would love to hear what you think if you try them!
